
I get a lot of questions from clients in the cooler weather regarding cravings; and sweet & comforting foods. It is common in the cooler months , trust me you are not alone if you feel this way!
Here is one of my new favourite comforts which I perfected last week in a big weekend cook up –
CHIA SEED PUDDING with BERRIES on top…
Give it a go and see if it satisfies your taste buds like it did mine!
INGREDIENTS:
1 cup of plain coconut or chobani yoghurt
1 cup of coconut milk
2 tbspn sugar-free maple syrup
1/4 cup chia seeds
1tspn vanilla extract
Berries ( strawberries, blueberries, raspberries )
INSTRUCTIONS:
Whisk all together and set in refrigerator for 4-6hrs.
Scoop out in to small cups and top with berries mix.
Refrigerate for 1-2 days until eaten.
