This has got to be one of the easiest lunch / dinners that I have ever prepared, with so much flavour, goodness and perfect for this time of year (to stop Winter yuckies)!
INGREDIENTS:
500gm chopped chicken breast
3 cup of spinach leaves
1 cup brocoli
1 red capsicum
1 cucumber
1 celery stick
2 tomatoes
3 cloves garlic
3cm chunk of ginger
1/2 cup sesame seeds
handful coriander
1 packet of miso soup powder
1 lemon juiced
3 cups of filtered water
INSTRUCTIONS:
Chop up all ingredients, and place in slow cooker (or high pressured fast-slow cooker as I did).
Cook for appropriate time: 10mins in high pressured fast-slow cooker, or 3-4hrs in slow cooker.
Serve with Sweet Potato Mash (Recipe on Blog) or Quinoa or Brown Rice!
