Ok, I haven’t written a blog for a while since I have been putting a bit of energy in to my own training & prep along with managing work and family life….

But I know once I share this AH-MAZING guilt-free Choc Brownie Recipe with you, all will be forgiven!

When I am deep in to comp prep, and cheat meals are no longer existent I seem to want to feed those around me more. And since my partner is being so supportive this prep and doing his own little “prep” with me, it seems it is my son Harry that gets to enjoy the goodness of my cooking/feeding!

This recipe for all you “sweet-toothers” out there has a guilt free factor as it has limited sugars and is based on chick peas – a versatile legume rich in fibre, protein, manganese & iron.

Here you go! Afternoon slumps will never be the same again…

Choc Fudge Brownie

1 tin Chick Peas

1/4 cup melted coconut oil

1/4 cup cocao powder

2 tsp vanilla extract

1 tbspn sugar-free maple syrup or honey

pinch of sea salt

3 beaten eggs

1/2 cup of dark chocolate chips (meltable ones)

1. Heat oven to 180degrees

2. Place chic peas, oil, cocao, syrup, vanilla extra and salt in to blender and blend til smooth.

3. Stir in eggs and chocolate chips. Blend well.

4. Pour in to oiled pan and bake for 20 mins.

5. Let cool for 10 minutes and then cut. (WARNING: will be amazing gooi-ness that will be hard to stop at 1 piece!)
